Hey fans here is a Football Snack Helmet Recipe #1 you can use for super great nachos. You will get invited to more game day parties and when asked I have always said secret family recipe. I say that all the time.

For convenience you can substitute chicken or burger I also take some short cuts regarding the sauce for convenience. I do personalize a store bought sauce and bring it to the party in an old glass Ragu spaghetti sauce jar. Honestly you can’t go wrong as long as you don’t burn it up. Set timer.

Football Snack Helmet Recipe #1

Memphis-style barbecue sauce:

  • 2cups ketchup
  • 1/2cup cider vinegar
  • 1/2cup dark brown sugar
  • 2teaspoons Worcestershire sauce
  • 1teaspoon garlic, grated with a microplane
  • 1 1/2teaspoons shallot, grated with a microplane
  • 1/4teaspoon Colman’s mustard powder
  • 1teaspoon hot sauce (I like Crystals brand)
  • 1 1/2teaspoons fresh ground black pepper

 

For the nachos:

  • 2pounds pulled pork, smoked or not, warm
  • 2hearts of romaine, shaved
  • 1bag of yellow corn chips
  • 1cup heavy cream
  • 16slices Kraft American singles
  • 1/2cup red onion, small dice
  • 1/2cup green onion, sliced into thin rings
  • 1cup shredded mozzarella
  1. Combine all the ingredients for the sauce in a medium sized sauce pan and stir to combine. Place the pan over medium heat and bring the sauce to a simmer. Reduce the heat to low and let it sit for half and hour. Remove the sauce from the heat until needed.
  2. Heat the oven to 500° F. Line an 18 x 13-inch half sheet tray with foil. Spread the shaved romaine lettuce across the bottom of the pan. Top with half the mozzarella and sprinkle with half the red onion. I know you think this step is crazy, but the wilted romaine that soaks up any and all juices will be your favorite part of the nachos. Trust me.
  3. Lay the bag of chips on its side and open it from the bottom. This keeps all the broken bits on the bottom, and the whole, good-looking chips stay on top. Place the bag onto the lettuce bottom side-down, and lift it slowly. Spread the chips out if needed.
  4. Place the cream in a small saucepan and bring it to a boil over medium heat. Add the slices of cheese, a slice or two at a time, only adding more when the first slices have melted. Be careful with the heat — the sauce can scorch. When all the slices have melted, turn the heat down to a simmer.
  5. Dress the pork with a couple of tablespoons of sauce just to dampen it. Don’t bathe the pork in the sauce. Spread the pork out across the top of the chips, then sprinkle with the remaining mozzarella.
  6. Place the nachos into the oven and bake 10 minutes or until the chips on top begin to brown. Remove the tray from the oven.
  7. Using a large spoon, drizzle the warm barbecue sauce across the chips to taste. It doesn’t require as much sauce as you might think, plus the pork is already coated too, and you can always serve more sauce on the side.
  8. Spoon the cheese sauce across the top, then top with the green onion and the remaining red onion. Serve.

Easy and Delicious Tailgate Party Food!

7-Layer Fiesta Party Dip

buy football snack helmetIf you are lucky enough to bring home any of this from a party as leftovers, fill flour tortillas with the dip and fry them up as burritos. They’re wonderful both warm and cold, and taste great for lunch!

2 (16 oz) cans refried beans (nonfat, if you prefer)
1/2 cup salsa
1 (1 oz) package Picante Passion Dip Kit
16 oz sour cream (lowfat or substitute, if you prefer)
3-4 cups guacamole
1 1/2 cups grated cheddar cheese
1 1/2 cups grated monterey jack cheese (or pepper jack)
2 roma tomato, chopped
2 (4 oz) cans of chopped black olives (small cans, about 3/4 to 1 cup)
1/2 cup chopped green onion

1.) In a bowl mix together the refried beans, half of the package of Picante Passion, the salsa, and 3 tablespoons of the sour cream.

2.) Spread the mixture into a large rectangular glass lasagna dish.

3.) In a separate bowl mix the rest of the sour cream with the remaining Picante Passion.

4.) Spread the sour cream mixture on top of the refried beans.

5.) Taking your guacamole, spread it carefully on top of the sour cream mixture.

6.) Take care not to mix the two together.

7.) Toss the two types of grated cheese together, then spread them on top of the guacamole.

8.) Sprinkle with the tomatoes, olives, and green onions. Chill in refrigerator for at least an hour before serving.

9.) You can make this recipe a day ahead and let it sit in the fridge overnight – let it come to room temperature before serving with round, restaurant-style tortilla chips. (The reason to serve it at room temp is so that when you attempt to dip your chips in they don’t break!) Some people like to serve this hot instead of cold: bake at 350 degrees F for 30 minutes, if you’d like to do that.

Tailgate Club Sandwich

buy football snack helmetEasy to make to bring along to a tailgate party or to eat at home while watching the game. Try adding different meats or vegetables for additional flavors!

1 loaf unsliced round bread (about 9″ diameter)/Hoagie Rolls
1 cup Ranch dressing
crumbled bacon
1 tsp Tomato & Parsley Vinaigrette
lettuce
1/3 lb sliced swiss cheese
3/4 lb sliced cooked roast beef
1/2 lb sliced cooked turkey
1 large tomato, sliced

1. Cut bread in half horizontally; hollow out center of each half, leaving 1/4 inch shell.
2. Mix 1 cup of Ranch dressing with a handful of crumbled bacon.
3. Spread 1/3 cup of the Ranch/bacon dressing mix into each shell.
4. Line bottom of each shell with lettuce.
5. Into the bottom of each shell layer cheese, roast beef, remaining dressing, turkey and then tomato and sprinkle with Tomato & Parsley Vinaigrette.
6. Top with lettuce.
7. Replace top shell.
8. To serve, cut into wedges.

Mint Chocolate Layer Bars

1 jar Triple Chocolate Mint Brownie Mix
4 eggs
1/2 cup vegetable/canola oil
1 tbsp water
4 cups Confectioner’s sugar
1 tbsp Peppermint Sugar

1. Beat the jar of brownie mix briefly with 2 eggs and vegetable/canola oil, until just blended.
2. Press into a 9 x 13 pan, lightly coated with vegetable spray.
3. Beat together confectioner’s sugar, Peppermint Sugar, 2 eggs, and cream cheese.
4. Spoon over top, spreading mixture evenly to edges.
5. Bake 1 hour to 1 hour and 15 minutes at 350 degrees, or until top is puffed and as cooked as you like.
6. Cool and cut into bars.

Fantasy Football Tips From a Fantasy Pro – Part 1

The following are few Fantasy Football Tips I’ve learned over the last several years; which have helped me win Several Games, a Championship, and finish in the Top of several leagues. These tips are primarily geared towards PPR Leagues, but if you are in a Standard League they can help you too. Whether you are new to Fantasy Football or a seasoned vet, I am sure there is something here for you.

Tip #1 – It’s all about the match ups, especially come Playoff time. This is one of the tips that I had to learn the hard way.

Several years ago I went UNDEFEATED for an entire season and made it to the Championship. I had the BETTER ROSTER and better players, BUT the other guy had a GOOD ROSTER with GREAT match ups. By match ups I mean that his players had an easier Playoff schedule than mine did. They played weaker defenses that couldn’t defend his players offensive positions that well. So his guys literally went off and mine didn’t show up; mainly because of the match ups and tip #2, which is…

Fantasy Football Tips #2 – Watch out for the WEATHER! This is another tip I learned in a VERY PAINFUL way. During this same Championship Game I had Tom Brady, Randy Moss, and probably at least one other player on my Roster that happened to be playing in a literal Blizzard. SERIOUSLY. This was the year that Brady and Moss both broke the TD records and the Pats almost went undefeated… You know, Brady is throwing 2-3 TD’s a game and Moss is catching 1 TD a game with over 100 Yards receiving.

Well on that day, I don’t think Brady threw a TD and Moss probably only had a couple of catches. It was brutal. So now when I am looking at the NFL Schedule, I am looking for studs that play in good climates or Domes at the end of the year… just in case the WEATHER bug shows up and kills my team.

Tip #3 – Fantasy Football tips #3 is comparable to fantasy football tips #1. Draft with the Playoffs in mind. Now nothing is 100%, because the NFL changes every year. But I will go to NFL.com or ESPN.com and look at the previous years TEAM STATS. You can Highlight the “Scores & Stats” tab and then go to “Team Stats” You can access this all by going to NFL.com.
